Preheat your oven to 180°C.

In a mixing bowl, whisk together the eggs, milk, three tablespoons of Parmesan cheese, and a pinch of nutmeg. Season the mixture with salt and pepper.







Melt the butter in a large oven-safe skillet over medium heat. Add the leek rings and sauté for several minutes until they are soft and golden brown.




Pour the egg mixture into the skillet with the leeks. Reduce the heat to low and cook until the bottom of the frittata sets. Sprinkle the remaining Parmesan cheese over the top.




Transfer the skillet to the preheated oven and bake for 15 minutes, or until the top is fully set and golden brown.
