In a saucepan, gently heat the heavy cream and dried lavender flowers until just simmering, then remove from heat to steep for 10 minutes.




In a mixing bowl, whisk together the egg yolks, granulated sugar, and vanilla extract until smooth.





Slowly temper the warm cream mixture into the egg mixture, then strain the custard through a sieve to remove the lavender flowers.




Pour the custard into the ramekins and fill the baking dish with hot water until it reaches halfway up the sides of the ramekins.



Bake for 40 minutes until the edges are set but the centers still wobble, then chill in the refrigerator for at least 4 hours.


Before serving, sprinkle a thin layer of sugar over each custard and use a kitchen torch to caramelize until golden brown.
