While the squash roasts, toss chopped carrots and onions with olive oil, salt, and pepper on a separate baking pan. Roast for 15 minutes, stirring halfway through.








In a large pot, sauté the garlic, ginger, chili pepper, and chopped celery in the remaining olive oil with dried mixed herbs.









Add the roasted vegetables and roasted squash to the pot along with the chicken stock. Simmer for 20 minutes to meld the flavors.



Transfer the mixture to a blender and process until completely smooth. Serve hot with slices of multigrain bread topped with brie cheese.
