While the rice is still warm, gently fold in the sushi rice seasoning until well combined, then let it cool to room temperature.




Using a sharp knife, slice the cucumber into thin, long matchsticks, removing the watery seeds if desired.



Place a sheet of nori on the bamboo sushi rolling mat, spread a thin layer of seasoned rice over it, and lay the cucumber strips across the center.







Roll the nori tightly using the bamboo sushi rolling mat to form a firm cylinder, then slice into bite-sized pieces with a sharp knife.
