Add the Italian sausage, removing the casings, and cook until browned and crumbled.




Stir in the chopped carrots, diced onions, bay leaf, Italian seasoning, red pepper flakes, and salt and pepper. Sauté until the onions are translucent.









Pour in the chicken stock and diced tomatoes. Bring the mixture to a gentle simmer.



Cover the pot and reduce the heat to low. Simmer until the carrots and other vegetables are tender.


Remove from heat, stir in the cannellini beans and fresh spinach, and continue stirring until the spinach has wilted.
