In a food processor, combine the fresh spinach, cilantro, and mint with a small amount of water. Pulse until a smooth, vibrant green paste forms, being careful not to add too much mint to avoid bitterness.

Heat the cooking oil in a large pot over medium heat. Add the cardamom pods, cloves, and cinnamon stick, allowing them to sizzle for about one minute until fragrant.

Add the diced onion to the pot and sauté until it turns golden-brown. Stir in the green chillies, chopped garlic, and ginger, cooking for an additional minute.

Add the beef to the pot along with the chili powder, ground cumin, garam masala, ground black pepper, and salt. Cook over medium-high heat for 10 minutes, stirring frequently to ensure even browning.

Stir in half of the yogurt and cook for 2 minutes until fully incorporated into the meat mixture.

Add the prepared green herb paste to the pot, mix well, and simmer for 10 minutes to allow the flavors to meld.

Stir in the remaining yogurt and continue to cook for a final 5 minutes. Taste and adjust the salt as needed before serving hot with parathas and fresh tomato salsa.
