Heat the olive oil in a large Dutch oven over medium heat.



Add the beef cubes to the Dutch oven and brown them on all sides, then remove and set aside. Add the diced onion to the same pot and sauté until translucent.



Stir in the Hungarian paprika, then return the beef to the pot. Pour in the beef broth and season with salt and pepper.






Cover the Dutch oven and reduce the heat to low, allowing the goulash to simmer until the beef is fork-tender.
