In a saucepan, combine water, unsalted butter, and salt. Bring the mixture to a rolling boil over medium-high heat.





Remove the saucepan from the heat and add the all-purpose flour all at once. Stir vigorously with a wooden spoon until the mixture pulls away from the sides of the pan and forms a smooth ball.



Let the dough cool for a few minutes, then beat in the eggs one at a time, ensuring each egg is fully incorporated before adding the next, until the dough is glossy and smooth.



Fold in the grated Gruyère cheese until evenly distributed throughout the dough.



Transfer the dough to a piping bag and pipe small mounds onto the prepared baking sheet, spacing them about two inches apart.


Bake the puffs for 20 minutes, then reduce the oven temperature to 175°C and bake for an additional 15-20 minutes until they are golden brown and crisp.
