Heat a frying pan over medium heat and sauté the carrot slices with cumin seeds for 15 minutes until tender. Remove from the stove and allow them to cool completely.




While the carrots cool, peel and grate the fresh ginger using a grater. In a small bowl, whisk together the grated ginger, fresh lemon juice, raw honey, fresh mint, and salt to create the dressing.









In a large mixing bowl, combine the cooled carrots, cooked lentils, and diced avocado. Pour the prepared dressing over the mixture and toss gently to combine before serving.
