In a mixing bowl, whisk the egg yolks and granulated sugar together until the mixture becomes pale and slightly thickened.




Slowly temper the egg yolk mixture by gradually whisking in the hot milk and cream, then return the entire mixture to the saucepan and cook over low heat until it coats the back of a spoon.






Remove from heat, stir in the pistachio paste, and chill the custard base in the refrigerator for at least 2 hours.


Pour the chilled base into an ice cream maker and churn according to the manufacturer's instructions until it reaches a soft-serve consistency.

Transfer the gelato to a freezer-safe container and freeze for at least 4 hours to firm up before serving.
