Place the all-purpose flour into a large Ziploc bag and season with salt and pepper. Add the capers to the bag, seal it, and shake well to combine the ingredients.



Add the prepared squid rings to the flour mixture in the bag. Seal and shake thoroughly until every ring is evenly coated.



In a small bowl, whisk together the mayonnaise and garlic to create a dipping sauce, then set aside.





Fill a large heavy-bottomed pot with cooking oil to a depth of 7 cm, ensuring the pot is no more than one-third full. Heat over medium heat until a small piece of bread sizzles upon contact.

Working in batches, remove a handful of squid from the bag, shake off excess flour, and carefully drop into the hot oil. Fry for approximately 3 minutes until golden and crisp.



Remove the fried squid using a slotted spoon and drain on kitchen paper. Serve immediately with the garlic mayonnaise and lemon wedges.
