Slice the fresh cabbage into large wedges, ensuring the core remains attached to keep the leaves together.


In a large stock pot, arrange a layer of lamb pieces with the fatty side facing down. Season with salt and whole black peppercorns, then top with a layer of cabbage wedges. Repeat these layers until all ingredients are used, finishing with a layer of cabbage on top.




Pour water into the pot until the ingredients are partially submerged. Bring to a boil over the stove, then cover and reduce to low heat. Simmer for 2 to 3 hours until the lamb is tender and falling off the bone.




Serve the stew hot alongside boiled potatoes and garnish with freshly chopped parsley.
