Prepare the spaghetti squash by cutting it in half lengthwise and removing the seeds. Brush the inner flesh with cooking oil and season with salt and pepper.






Roast the squash in a preheated oven at 200°C, cut side up in a baking dish, until the flesh is tender and easily pierced with a fork.




In a mixing bowl, combine the shredded chicken, enchilada sauce, beans, corn, olives, cilantro, and half of the white cheese.










Scrape the sides of the roasted spaghetti squash with a fork to loosen the strands, then divide the chicken and bean mixture into the squash boats.




Top the boats with the remaining white cheese and broil in the oven until the cheese is melted and golden brown.



Garnish with fresh cilantro and sliced avocado before serving.
