In a separate mixing bowl, whisk the egg yolks and granulated sugar together until the mixture is pale and smooth.




Slowly temper the egg yolk mixture by gradually whisking in a small amount of the hot milk, then pour the tempered eggs back into the saucepan with the remaining milk.




Continue to cook the custard over low heat, stirring constantly until it thickens enough to coat the back of a wooden spoon, then remove from heat and chill in the refrigerator for 2 hours.



Pour the chilled base into an ice cream machine and churn according to the manufacturer's instructions until thickened.


Transfer the mixture to a freezer-safe container and freeze for at least 4 hours to firm up before serving.
