Juice the remaining grapefruit and orange. In a small bowl, whisk together the fresh citrus juices, lemon juice, minced shallot, fresh mint, olive oil, salt, and black pepper to create the dressing.











Bring water to a boil in a pot fitted with a steamer basket. Steam the asparagus for 5 minutes until tender-crisp, then immediately transfer to a bowl of ice water to stop the cooking process. Drain and pat dry.





In separate bowls, toss the steamed asparagus with 1.5 tablespoons of the prepared dressing and the cooked quinoa with 1/4 cup of the dressing.



Assemble the salad by tossing the mixed greens with half of the remaining dressing. Arrange the quinoa in the center of a serving dish, top with the asparagus and citrus segments, then garnish with feta cheese and pumpkin seeds. Drizzle with the final bit of dressing.
