Drain the dates thoroughly. In a food processor, combine the pistachios, shredded coconut, cocoa powder, and a pinch of salt. Pulse until the mixture is finely ground.








Add the softened dates and vanilla extract to the food processor. Pulse the mixture until it begins to clump together and forms a cohesive ball.



Scoop small portions of the mixture and roll them into bite-sized balls using your hands.
If using a chocolate coating, melt the dark chocolate with a small amount of coconut oil in a microwave-safe bowl using short intervals, stirring until smooth. Dip the prepared balls into the melted chocolate, cocoa powder, or shredded coconut as desired.
