Add the potatoes and stock to the saucepan, bring to a boil, then cover and simmer for 15 minutes until the potatoes are tender.



Stir in the iceberg lettuce and fresh tarragon, cooking just until the lettuce wilts.




Remove from heat and process the mixture in a blender until completely smooth.
