Heat olive oil in a large frying pan over medium-high heat. Remove the chicken from the marinade, reserving the liquid, and sear the chicken thighs until browned on both sides.






Remove the chicken from the pan. Pour the reserved marinade and chicken broth into the pan and bring to a boil.



Return the chicken to the pan, cover, and simmer for 10 minutes.



Whisk the cornstarch with a small amount of water in a separate container, then stir this mixture into the pan. Turn the chicken pieces, cover again, and cook until the chicken is tender and the juices run clear.






While the chicken cooks, bring water to a boil in a pot, add salt, and cook the rice according to package instructions. Once cooked, toss the rice with chopped green onions, parsley, ginger, and shredded coconut.
