Wash the celery and chop it into one-inch pieces using a chef's knife.



In a pot, combine the chopped celery, water, and lemon juice. Let the mixture sit for 10 minutes.




Add salt and pepper to the pot, bring to a boil, then reduce heat and simmer for 5 minutes.



Drain the liquid from the celery using a colander.


Return the celery to the pot, add olive oil, and sauté over medium heat for 5 minutes.




Stir in the vegetable stock, cilantro, and garlic, cooking for an additional 5 minutes before removing from heat to cool slightly.





Drain the soaked cashews and add them to the pot. Use a blender to puree the soup until smooth.



Return the soup to the pot, stir in the sherry, and simmer over low heat for 3 to 4 minutes.



Serve the soup immediately, garnished with croutons if desired.
