Place the soaked fish in a pot with fresh water, bring to a boil, and simmer until tender. Drain the water, allow the fish to cool, and shred it into bite-sized pieces.



In a skillet over medium heat, fry the bacon until crispy. Remove the bacon, drain most of the fat, and reserve about one tablespoon in the pan.


Add the yellow onion, green onions, minced scotch bonnet pepper, and garlic to the skillet. Sauté for 2 minutes until the vegetables are softened.
