Pat the cod fillets dry with paper towels, then lightly brush the top side of each fillet with olive oil and season with salt and pepper.




Press the oiled side of each cod fillet firmly into the seasoned bread crumb mixture to ensure a thick, even coating.



Heat the remaining olive oil in a large non-stick skillet over medium-high heat. Once hot, place the fish fillets into the pan, breadcrumb-side down.





Sear the fish for 3 to 5 minutes until the crust is golden brown and the fish begins to turn opaque. Carefully flip the fillets using a spatula and cook for an additional 3 minutes until the fish is cooked through.
