Add the finely chopped shallot, onion, and garlic to the pan. Sauté for about 2 minutes until they are softened and lightly browned.




Stir in the sliced apples and the shredded green cabbage. Cook over medium-high heat for 5 minutes, stirring occasionally.



Season the mixture with cinnamon, honey, salt, and black pepper, stirring well to combine.





Increase the heat to high to deglaze the pan. Carefully pour in the wine and white vinegar, scraping up any browned bits from the bottom of the pan.



Reduce the heat to medium-low, cover the pan, and simmer gently for 2 hours until the cabbage is tender and flavorful.
