Rinse the salmon fillets under cold running water and pat them thoroughly dry with paper towels.


In a sauce pan over medium-high heat, carefully reduce the bourbon or brandy until only a small amount remains.



Add the apple juice, brown sugar, and minced garlic to the reduced alcohol. Simmer until the mixture thickens into a syrup-like consistency.




Season the salmon on both sides with salt and pepper. Brush the skin side with olive oil and place it skin-side down on the soaked cedar plank.






Place the plank on a preheated grill at medium-high heat. Monitor the internal temperature of the salmon using a probe thermometer.




Once the internal temperature reaches 38°C, brush the prepared apple glaze over the salmon. Continue cooking and glazing every few minutes until the fish reaches your desired doneness.
