In a large saucepan, heat the extra virgin olive oil over low heat and add the sliced onions. Cook slowly, stirring occasionally, until they are completely soft and golden brown, which takes about 60 minutes.




Add the anchovy fillets to the onions and stir until they dissolve into a paste. Season with salt and black pepper to taste.





Meanwhile, bring a large pot of water to a boil, add salt, and cook the bigoli pasta until al dente. Drain the pasta using a colander and toss it directly into the onion and anchovy sauce, adding a splash of pasta water if needed to emulsify.
