Soak the rinsed rice in fresh water for 20 minutes, then drain, reserving the soaking water.




Bring the reserved soaking water to a boil in a medium saucepan, add the rice, reduce heat to low, cover, and simmer for 20 minutes until water is absorbed.




Remove from heat, let sit covered for 5 minutes, then fluff with a fork and stir in the ghee and salt.



Once the rice reaches room temperature, gently fold in the yogurt and fresh ginger.
