Remove the vegetables from the oven, place them in a bowl, and cover with plastic wrap to steam for 10 minutes. Once cool enough to handle, peel off the charred skins and remove the seeds.



Finely chop or process the roasted peppers and eggplant. Heat the sunflower oil in a large heavy-bottomed pot over medium heat.





Add the vegetable mixture to the pot along with minced garlic and onion. Cook slowly over low heat, stirring frequently, until the mixture thickens and the moisture has evaporated, about 40 minutes.




Season the Ajvar with salt and black pepper to taste. Serve warm or store in sterilized jars.
